QUICKIE RECIPES

I hesitate to even call them recipes, since most of these are just so quick and easy to make! I hope these help you find new and interesting things to try.


Vegetarian Chili – in less than 30 minutes!

1 can chili beans in mild sauce

1 can tri-color beans

1 can tomato paste (I accidentally got some with pesto in it, but it was good!)

1 small can green chilis

Chili powder to taste, 1 used 1 T

You can add other spices as desired. I also added 1 tsp cinnamon to make it Cincinnati Style

Add water to desired thickness, I added one tomato paste can of water

Let Simmer until you’re ready to eat.

Serving suggestion: serve over 1 cup spaghetti, top with cheese and sour cream to make it Cincinnati Style.

Banana Pancakes

1 cup ready pancake mix

1 egg

1 large ripe banana

1/2 cup milk – add more if too thick

1/2 T oil

1 tsp vanilla extract

1 tsp or so cinnamon

You can add other items if desired, like blueberries, or even chocolate chips

Spray a non stick pan with cooking spray before adding pancake mix to the pan.

Cook them over medium heat or they will burn.

Turn the pancakes when the top starts to get bubbles.

Makes 6 good sized pancakes. I eat 1 breakfast of 2 pancakes, then use them as snacks or add 1 pancake to other breakfast items.

Serving suggestion: instead of syrup, top with apple butter or strawberry fruit spread
