Dinner at Mom & Dad’s and Happy 60th Anniversary

Sometimes, you have to just do the best you can…

Today is my parent’s 60th Wedding Anniversary. It’s really Tuesday, but we’re having dinner to celebrate it today. Mom insists on cooking, and it won’t be “on plan” food. I’ll do the best I can, and ski dessert. I made sure to have a healthy breakfast so I won’t be starving when I get there!

2 Kodiak Banana Pancakes (Home made)

2 T apple butter

1/2 cup cottage cheese

1/2 cup mixed berries

1/4 banana

black coffee

Snack

Dinner – at mom’s – challenging!

6 fried shrimp (baked in the oven)

2 dinner rolls (i wanted 1 but stuck my finger in another and had to take both)

1 medium baked potato

2 tsp Butter

1 T sour cream

2 T coleslaw

Snack

Chobani Zero greek yogurt – mixed berry

1/2 cup mixed berries
